Fattoush Bean Salad

A simple and fresh Mediterranean style salad with Edgell Red Kidney Beans and charred tortillas.

Ingredients

  • 70g can Edgell Snack Time Red Kidney Beans, Corn with Roasted Capsicum & Lime
  • 5 cherry tomatoes, quartered
  • 1 baby cucumber, sliced
  • ¼ cup chopped fresh herbs (coriander, parsley)
  • ½ cup baby rocket leaves
  • 1 small flour tortilla, lightly charred, broken into pieces or cut into wedges
  • Extra virgin olive oil, for drizzling

Method

STEP 1
Combine Edgell Red Kidney Beans with tomato and cucumber in a small bowl. Season to taste.
STEP 2
Gently fold through rocket, herbs and tortilla pieces.
STEP 3
Drizzle with olive oil and serve.
Tips
