- 70g can Edgell Snack Time Red Kidney Beans, Corn with Roasted Capsicum & Lime
- 5 cherry tomatoes, quartered
- 1 baby cucumber, sliced
- ¼ cup chopped fresh herbs (coriander, parsley)
- ½ cup baby rocket leaves
- 1 small flour tortilla, lightly charred, broken into pieces or cut into wedges
- Extra virgin olive oil, for drizzling

Method
STEP 1Combine Edgell Red Kidney Beans with tomato and cucumber in a small bowl. Season to taste.
STEP 2
Gently fold through rocket, herbs and tortilla pieces.
STEP 3
Drizzle with olive oil and serve.
