Ingredients
- 2 tablespoons Coles Classic Olive Oil
- 700g Coles Chicken Thigh Fillets
- 2 x 250g pouches Coles Microwave Brown Rice
- 1kg packet frozen Birds Eye Winter Vegetables
- 500g jar Leggo's Bolognese Pasta Sauce
- 100g Coles Australian Style Fetta, crumbled

Method
STEP 1Heat oil in a large non stick frypan over medium-high heat. Add chicken, season to taste and cook for 6-8 minutes, turning occasionally until lightly golden. Remove from frypan.
STEP 2
To the same frypan, add rice, frozen Birds Eye Vegetables and Leggo's Pasta Sauce. Stir occasionally for 5-7 minutes, until vegetables are starting to soften.
STEP 3
Arrange chicken fillets in rice mixture and sprinkle with fetta. Reduce heat to low. Cover and cook for a further 10-15 minutes or until chicken and vegetables are fully cooked. Serve.
Tips
Garnish with chopped fresh parsley before serving.
